In 2003 there was an option that you could have multiple versions saved
within the same document. How does this funtion work in 2007, cannot see the option, do find a tracking but not that I can save with different version numbers and explanation about the changes in a given version |

Might be you are thinking of Shared Workbooks?
On Ribbon select Review Tab and Share Workbook.
