Save multiple versions of a document/excel sheet
 
In 2003 there was an option that you could have multiple versions saved
within the same document. How does this funtion work in 2007, cannot see the
option, do find a tracking but not that I can save with different version
numbers and explanation about the changes in a given version

Might be you are thinking of Shared Workbooks?

On Ribbon select Review Tab and Share Workbook.
