Default Excel 2007 pivot chart/table copying vs Excel 2003

In Excel 2007, when I copy a pivot table with it's chart, the new chart copy
remains linked to the original pivot table's data series. Furthermore, when I
go to the chart and select 'Change Data Connection' it is all grayed out. So,
I cannot seem to figure out how to produce a copy chart off of a copied pivot
table.

Here is what I would do in Excel 2003 specifically, that I cannot seem to
find an alternative in Excel 2007:
1. Stage my data in Excel in "Sheet1"
2. Create a new pivot table on a new sheet called "Pivot1" and the chart on
a sheet I called "Chart1".
3. Copy both the Pivot1 and Chart1 sheets and begin customizing the chart
of "Chart 1 (1)". As I would customize this copy chart, the pivot information
in "Pivot 1 (1)" would change, but nothing would change in the sources of
Pivot1 and Chart1.

This is an extremely useful technique in Excel 2003 for generating many
different chart views of pivot information, whilst preserving the pivot table
information for each one individually. I really hope there is an easy way to
do this in Excel 2007.

The options that I seem to have, neither of which are as efficient as my
Excel 2003 process a
1. Save original pivot chart as chart template and then apply that to new
pivot chart created from scratch.
2. Create pivot chart from scratch and customize chart from scratch.

If there is no solution in Excel 2007 to something that Excel 2003 did in
default, then I would suggest an "Excel Options" option be created called
such as a checkbox for "Pivot Chart copies remain linked to source Pivot
Table".
