Default My "Undo" button is grayed out.

Don't know if I should have said "gray" or "grey", but my "undo button"
remains grayed out even though I'm entering data in and selecting cells.
There is also no "Redo" button. Is there some setting for this that I'm
unaware of?

There are lots of things that can reset the undo/redo stacks.

You could have run a macro (or an event macro could have fired).

You could have saved the workbook.

There's a setting in the windows registry that tells excel how many undo levels
to keep track of--maybe it was set to 0.

Default My "Undo" button is grayed out.

To add to Daves response, to get your re-do button on the standard tool bar
look to the far right end and you will see a dropdown arrow ( a tool tip will
say "More Buttons"). Once clicked on it will say "Add or remove buttons"
Click on this and look down the list and place a check mark for the "Redo"
button.
