Default Data Items go missing once unchecked

You can check and uncheck items in the row field dropdowns and the
column field dropdowns. Maybe that's what you're remembering.
If you uncheck an item that's in the data area, it's removed from the list.

When you clear a checkbox in a data field dropdown list, you're removing
the field from the pivot table layout. Just like a row field that was
removed, you have to drag it back to the pivot table layout, in order to
see it again.
