Default Consolidating Sales Data to Summary Worksheet

I'm looking to the experts on this one as I am a basic Excel (2003) user.
I'm trying to automate consolidating regional sales data for 8 regions (8
individual worksheets) onto 3 summary worksheets (one for each item)

On the summary worksheet I would like to consolidate the data by the
delivery date, case qty totals and sales totals by month by region. The goal
is to group all sales (both cases and dollars) by item, by month, by region

The regional worksheets are updated continuously and are set up similar to
this example
