To see my entire document I have the zoom around 68%.
At this scale, my drop down validation menus are way too small to read
even though I can read all the other normal text.
How can I adjust the scale of the drop down box and its menu without
changing the zoom scale of the entire document?

In a data validation dropdown list, you can't change the font size.
