Default

Select A2 (usually), and hit Window--Freeze Panes. Everything above the
selected cell will freeze in place; everything to the left will freeze in
place.

The first time that I tried this in Sheet 1 it works - i.e., freezes top and
left side of page. Then in Sheet 2 I tried to repeat and it only freezes the
top and not also the left side of the page. What has gone wrong?

If you want to freeze row 1 and column A you would select cell B2 before
freezing. If you selected A2, only row 1 would be frozen.
