When I type in a number (5-10) for example, it either changes it to a date or
takes of the 0. I want it to show up the exact same way I type it. How can I
do that?

Or prefix your entry with an apostrophe:

'5-10

You must have formatted the cell in Date format.
Please follow following steps
1.Select the cellRight clickFormat cells
2.From the number tab,select number from the category list
3.Click OK
Now it should work
