We have an Excel price sheet that is over 2mb. If we copy and paste all the
information into a new Excel book, the file size is less that 1mb. What can I
change on the larger workbook in order to reduce the size?

If you do CTRL-End on one of the sheets, does the cursor go beyond
where you think (know!) the data stops?

Excel is not very good at claiming back memory from rows or columns
whose contents have been deleted. This link to Debra Dalgleish's site
explains how you can recover this manually:
