Default Switch to change data fields to 0's, then back to original data?

I would like to set a switch that will switch data in certain fields to zero,
then will refill with the originally entered data when the switch is turned
off. I think that I have seen this before in an excel program, but I cannot
figure out how to do it.

Anyone know how?
