Default Headers and Footers format

I would like to place a header in an excel document to go across the document
and not word wrap or have to split it up in three sections.

Please explain how this can be done!

The fact that the custom header dialogue is split into 3 doesn't mean that
you can't fill it all from the one section. Whatever you want, put it in
the centre section, and it can go all the way across the page.
