Default I can not see colors in my spreadsheet when using Excel 2003

When using Excel 2003 I can make changes to the color of text, box fill etc.,
but the display stays black and white. I know that the color changes are
taking effect because I can view them in print preview and when I print the
document out. However my working view of the document does not show color,
how can I change this?
