Default Auto Adjusting Text Boxes?

Is there a way to have text boxes expand, if necessary, to account for large
amounts of text? I'm thinking more length wise vs. width.

Depending on what kind of textbox you have it may have a 'auto size'
option. If you add one from the Drawing toolbar, double-click the
object then the Alignment tab.
