Default Auto dates

I am using the NOW() function to put dates on sheets, i want the date to stop
being inserted after toda. In other words use today then save the work, then
tomorrow it would still have today's (yesterday) date. Start another sheet
and todays date would show up etc.

Thanks for all the help
