Default Converting a time calculation to a value to do math with

I want to take a FINISH TIME (10:00 PM) and subtract a START TIME (9:20 PM)
and then take the 40 Minutes (or 66666666% of an Hour) and divide the TOTAL
UNITS PRODUCED in those forty Minutes to determine a UNITS PRODUCED PER HOUR.
