Default pivot dropdown list

In pivot, how do you refresh the list of options that
comes up on dropdown? Seems like once a piece of data is
there, even if removed from original list and then pivot
refreshed, item is still there. Also, how do you sort
that list alphabetically or otherwise?

There are instructions here for clearing old items from a PivotTable
dropdown list:

If you sort the field in the pivot table, the items in the field's
dropdown list should also be sorted.

To sort a column field, select a cell in the column area, and click the
A-Z button on the tool bar.
