how do I add another item to an existing drop down.
If you double-click on the drop down (or right-click and choose Format
Control) you will find that the drop down has an Input Range where it pulls in the data. You'll have to edit the range in the sheet and the range listed in Format Control. Note that if it says a NAME (instead of a range) in the Input Range field that it is using a range name that could be redefined with Insert/Name/Define.
