Default how do i enter date and time in cell without it changing

I WOULD LIKE TO KNOW IF IT IS POSSIBLE TO HAVE A FORMULAE THAT HAS DATE AND
TIME IN IT IN ONE CELL AND IT STAYS ON THAT DATE AND TIME. I HAVE TRIED NOW()
BUT IT CHANGES WHEN THE COMPUTER CLOCK CLICKS OVER TO NEXT MINUTE AND HAVE
TRIED TODAY() BUT IT DOES NOT SHOW TIME
