Default How do I create a multi-worksheet pivot table?

I can't get the fields (headings) to sort by selecting my source data from 10
worksheets. I can do it with 1 worksheet being the source. When I try to do a
multi-page pivot table the fields do not come up to be the same. Is there
something different that needs to be done for a multi-page pivot table?

Not clear on this question - All of my sorts seem to work in a multi-sheet
pt.
