Default Mapping Tables.Fields from a data source to my MS Access Table Structure

Have a system to analyze accounting data in MS Access. Need to work
with data output from several source accounting systems. The source
data is typically output to MS Access. Since the source data structure
varies (tables and field names), I need to "map" data tables and fields
from the source into my system. Any suggestions how to create the "map"
interface and how to reference the various tables.fields in my analysis
system?
