Default Scheduling Hours

How do I check that our normal business hours are covered by our one or more
employees. i.e. 1.00pm - 2.00am is my Bar's business hours. If I have two
employees on any paticular day can I use excel to check that from 1pm to 2 am
that there is no gap in between.
