Default Calculate difference between 2 date and times with average

I have used the formula:
Start time End time
6/9/2007 10:35 AM 6/9/2007 3:30 PM 4:55

Formula Description (Result)
=Text(b1-a1,"d:h:)

But when I use the text function, I cannot calculate an average. Also, if
you know a way to calculate the difference and exclude weekends...
