Default how do I set the Owner in a spreadsheet

From the File menu, choose Properties, then the Custom tab. Select
"Owner" from the list and enter the desired name.

You want Owner or Author?

Jacob's suggestion will give you Author.

To add Owner go to FilePropertiesCustomOwner and type a name and Add
