Default # symbol appearing instead of typed text in a cell

Pulling my hair out, I've formatted a cell for text and set to wrap but after
I've typed my information, all that appears are numbers symbols. When I click
on the number symbols, the text appears, but when I click onto a different
cell, the number symbols reappear. There seems to be a relation with the
amount of text I've typed as this does not happen in other cells with the
same formatting but less text. Any ideas?
