Default Converting old version file

I am having trouble converting a large file with over 80 sheets that was
created
in Excel 2000 to Excel 2007and Excel Mac 2008. It converts okay but from
their on it always takes a long time to open/close file or to save any
changes is there something Iv'e done wrong or is there something that can be
done to improve this situation
