Default Formatting issues with Excel sheet in email body

We are sending an excel sheet using the "send to mail recipient" button in
Excel. In some versions of Outlook, the sheet appears with all the rows
single-line height. In Outlook 2007, some of the rows are double-line
height because the text in the cell is wrapping. How can we stop this? We
want all the rows to be single-line height and if there is too much text in
a cell, we just want the text to stop at the end of the cell without
wrapping.
