Default How do you reset the position that pressing CTRL-END moves you to?

In Excel, pressing CTRL-END moves the cursor to the furthest
bottom-right-hand used cell in the s/sheet.

Suppose this is AZ1000. Delete 500 (bottom) rows and press CTRL-END again.
This still takes you to cell AZ1000, and not AZ500 as you might expect.

Having deleted rows/columns in a s/sheet, how does one reset the position of
the 'END' cell that Excel stores?

Try clicking save first. This should reset your range.

Try saving the workbook and then using Ctrl+End
