Default Pivot tables and deleted data ... HELP PLEASE

I acquired an excel document from a client who wish me to use it for an
upcoming project. I deleted the data from the main page that all the pivot
tables feed from (which you would think would make all data or memory of it
completely disappear). However the information that was on the main page is
hanging around in the drop downs on the pages that use the pivot tables even
though it is no longer showing anywhere else (I did refresh the data).
Selecting it from the drop down does nothing (because there's no data
attached) however my client is bothered by the mere fact that the old data is
being remembered at all so I need to get rid of it.

If any of what I've said makes sense at all ...what do I need to do to be
completely rid of it (short of rewriting the entire document which is rather
extensive).
