Default pivot table data

I have a large spreadsheet of employees and hours worked and convert that
into a pivot table. Is there a way of excluding certain employees from the
pivot table, without deleting them from the main spreadsheet? Could I maybe
"tag" those employees with an indicator in certain column; if that column
contains that value I would like to exclude them from the pivot table.
