Default Problem displaying color

How can you display the formatting color to text/numbers or cell shading on
the display of the worksheet, rather than having it show up only when you
print or print preview? I used different colors in rows to indicate
different levels of importance in tasks until they were completed, and it
appears that you can't do that in excel 2007?

Thanks,
