How do I calculate elapsed hours?

I need to know how to calculate elapsed hours.
example: start time of 1:30 PM, end time of 9:30PM equals 8 hours.

How would I factor in a 30 min unpaid lunch?
example: start time 1:30PM, end time 10:00PM equals 8 hours
