I am hyperlinking cells in excel however because of the amount of data on the
row I need the cell to be highlighted to stand out. |

The cell with the hyperlink should be obvious as it will show up (normally)
as blue underscored text. You'll have to format the cell that it's hyperlinking to using Format | Cells and deciding how you want to highlight it - via a change in text color or cell interior coloring ([Patterns] tab in pre-2007 Excel, [Fill] tab in 2007).
