Default excel spreadsheet

I have some data in an excel spreadsheet, I do not want to delete, I just
want to cross out and write above it. How do I do that.

Say the information in in cell Z100 and Z99 is empty and available.

Select Z100 and:
Format Cells... Font Strikethrough

then select Z99 and enter the new data.
