Default Pivot Table DATA area drop down menu items disapper after switchof

Dear friends

Format of my pivot table is shown below
Year Month Rain Temperature Evaporation
1980 jan 25 31 1.2
1980 Feb 22 28 0.8
....
....
1981 jan 26 241 1.1
1981 Feb 23 28 0.8
...
I have put Year and Month to ROW area so that I can select required
duration. Then I put Rain, Temperature and Evaporation fields to DATA area. I
need to switch off and on each of these columns parameters but if I switch
off Rain column it is not available in the drop down list for switch ON
again. However ROW drop down menu is working properly if I OFF Year data
column it is still available for switch ON again

I would be appreciated if any one explains me how to keep DATA area drop
down menu items not disappearing for On and Off

Unlike Row or Column field items, if you deselect an item in the Data
dropdown, it's removed from the pivot table, and from the Data dropdown
list. To see it in the pivot table again, you can drag it back from the
Pivot Table Field List. There's no setting where you can change this
behaviour.
