Default Blank Pivot Cells

Alright, I put up a similar question yesterday and I'm trying to find a less
time consuming way of doing this. Here goes.

I have a pivot table where I am looking at operating room turn over. So I
have been able to create a pivot table where I can see how patients are
following one another based on time in and time out by day by room.

However, to calculate the time difference between the first patient out and
the next patient in, I am unable to calculate because the pivot columns are
not all filled in. I do not need to keep the data in a pivot if that helps.
Any ideas would be helpful to avoid a lot of time wasted with manual entry.
