Will Excel spreadsheets accessed via a webbrowser that are running on a
Sharepoint 2007 server be able to be edited by multiple users and have each of their changes made e.g. not formulas, but input data |

Why do you say yes? It IS not be possible to use Excel services to do changes on Excel sheets, you can show them, but not edit them through the webpage. The only thing 'editable' is the layout of a pivottable.
