Default How do I represent omit in a list of data in excell?

I am creating something for people who may or may not be familiar with
excell. I need to be able to lock all formulas (etc..) so when data for
specific days are not availiable I need to be able to represent omit so that
the overall pecentages will not be effected... How do I represent omit?
