Default how do i get excel to ignore a value when using formulas

i am working with a sheet that someone has set up at work. it works out %age
against sales plan and until the takings cell has been filled in it displas
-100.00. when the chart is then calculating a total over a period of weeks
(average) i have to change the formula. Is there a way that i can get excel
to just ignore the -100.00 when it is caluclating the answer from the sum?

All help would be appreciated
