Default assign short-cut keys in EXEL

Prior to EXEL 2003, I used to be able to SHORT-CUT assign any key to pretty
much all of my frequently used functions. NOW, Im at MS's mercy. I am
suppose to follow these sequence:

GOTO TOOL
GOTO Customize
GOTO Command Tab ReArrange Commands Controls Modify Selection

Nevermind, that this function went from 2 steps to 5, once Im in Modify
Selection, I cant do a darn thing to assign/change the short-cut key... IT
ONLY LETS ME CHANGE THE NAME....
