When I make a chart in excel, its horizontal and vertical dimensions seem to
be pre-set. How can I expand the vertical height of my chart? My data spikes
at one point, and I want to be able to show it without all the rest almost
vainishing into a flat line at the bottom. (Yeah, I know, I could use a log
scale, but I don't want to here).

Click the chart. You should see black squares at the corners and the
middle of each dimension. Click and drag the top or bottom one.

Alternatively, double-click the y-axis. From the scale tab, set the
max. value so that most of your data are meaningfully displayed. The
outlier will appear to be above the max. value shown on the y-axis.
The effect is best seen with a line or xy scatter chart.
