Default I need my chart color to be panatone . . .

I see how to modify colors, but can't see where I can add CMYK color for
Panatone . . . it will be imported into an InDesign document.

Excel doesn't do CMYK. If you know the RGB or HSL equivalent, you can
change the default Excel palette through the Tools menu, Options menu
item, Color tab. Excel uses only 56 colors in its palette, but you can
modify any and all of them if you want.
