charting

How do I chart when I have three variables. Example:
I have hour of the day for 24 hours, I have day of the week, 7 days, and I
have bussing riders per hour, per day.

I want to break the ridership down by hour by day and chart into buckets
into a histogram chart.

Any suggestions?
