Try this for total number of Tuesday customers:

=SUMPRODUCT((WEEKDAY(A1:A365)=3)*(B1:B365<""))

And try this for the average:
=SUMPRODUCT((WEEKDAY(A1:A365)=3)*(B1:B365<""))/SUMPRODUCT(--(WEEKDAY(A1:A36
5)=3))
