Default Excel - option to select the same header for mutliple tabs

It would be a nice feature in excel if you wanted the same header across
multiple tabs to be able to select that as an option instead of
copying/pasting in each tab manually.

You can do this by grouping sheets together. Assuming you have your
header set up on Sheet1, then select this sheet. Hold down the CTRL-key
and select the other sheets that you want this header applied to. Click
File | Page Setup | Header/Footer | Custom Header (as if to edit what
you have) then OK. You can un-group the sheets by right-clicking one of
the sheet tabs. You should then find that all the sheets you had
selected have the same header now.

Hope this helps.
