This is a tricky question to explain.

I have a spreadsheet which has many columns of numbers in currency format. I
am trying to minimise the column widths so that I can see more of them
without having to scroll right / left.

If I have a number £2500.00, I can format it as £2.5K. If its value is
£2501.00, I can format it as £2501. If its value is £2501.36, I have
to format it as £2501.36.

I know how to format numbers & this is not a problem, but is there anyway of
automatically formatting a number to use the minimum column width?

Have you tried "Autofit Column Width"? It will automatically adjust your column widths to fit the width of the data in each column so you never have a column with wasted space. The command is in a different place depending on which version of Excel you have. If you need help finding it let me know.
