How do I change the "zoom" on all the excel sheets at one time?

Manually?
You can hold the shift key down or the ctrl key down and select all sheets. Setting the zoom then shanges all sheets. As a note with all sheets selected changes to one sheet are made to all sheets. Right-click on a sheet tab and "Select all sheets".
