How do you pull a scanned document into an excel spreadsheet to edit?

Default scan a document and pull into excel spreadsheet to edit

There are many OCR packages that will convert a scanned document (image file)
into an editable Excel spreadsheet.

I have used Readiris Pro with some success and I'm sure there are others
here that would recommend something else.

What format is your "scanned" document in? Is it a PDF? TIF? JPG?
