I am looking to create a pivot table format that i can apply as an auto format.

Only if you have excel 2003 or higher.

Or if you are willing to get into the world of VBA programming.

This feature will be available in Excel 2007, but you can't create your
own AutoFormats in any current version, or modify the existing AutoFormats.

Is there a way that you can get colour/font formating of a pivot table to
remain after a refresh without the autoformat functions?

Right-click a cell in the pivot table, and choose Table Options
Add a check mark for Preserve Formatting, and turn off AutoFormat.
Click OK

To format cells, Enable selection should be turned on.
To enable selection --
From the Pivot toolbar, choose PivotTableSelect
If it's not already activated, click on Enable Selection

To format a section of a pivot table, e.g. subtotals --
Move the pointer to the left of a subtotal heading in the pivot table.
When the black arrow appears (like the one that appears when the pointer
is over a row button), click to select the subtotal rows
in the pivot table.
Format the selected subtotals
