=COUNTIF(Range,"C")

if there can be are more than one C i the cells


=SUMPRODUCT(LEN(Range)-(LEN(SUBSTITUTE(UPPER(Range),"C",""))))

both formulas will count c and C, if you want C only

=SUMPRODUCT(LEN(Range)-(LEN(SUBSTITUTE(Range,"C",""))))
